Bringing Sustainability to Life
One Kerry product, CleanSmokeTM by Red Arrow®, is being manufactured in multiple Kerry facilities across North America and used by food manufacturers globally. Created from a proprietary process using only wood, heat, water, and filtration, our 100 percent natural smoke product enables our customers to make products more consistently and efficiently that are better for you and the environment.

Traditionally manufacturers would burn wood in their facilities to create a smoked product. Smoked products provide our food with authentic flavor, color, and texture. Using CleanSmoke by Red Arrow alone or in conjunction with traditional methods provides the following sustainable health and environmental benefits:
• Eliminates smoke cloud, which reduces CO2 emissions by 84 percent
• Eliminates 70 percent of cleaning chemicals and 88 percent of the water needed for cleaning waste stream of traditional smoking methods

In addition to meat processing, CleanSmoke® provides an authentic smoke flavor for products such as BBQ sauces, seasonings, marinades, and coated casings.
The CleanSmoke by Red Arrow Process
The process starts with recycled wood, partnering with lumber mills that practice sustainable forestry initiatives such as selective cutting, replanting, and wildlife and water management. Together, we collect millions of pounds of sawdust per week from sawmills that would otherwise be destined for a landfill. Wood species include hickory, ash, maple and oak, wild cherry, pecan, apple, and mesquite.
The sawdust is carefully dried, so it burns properly, then heated in a wood smoke generator where the smoke cloud is created. The smoke cloud is captured in water, resulting in minimal emissions, while the harmful components such as tar and fly ash are then settled out through phase separation and reused as a fuel source to heat our plants.
The smoke is then filtered, inspected, and packaged prior to shipment to our customers. Once the product leaves Kerry, it is shipped to our customers’ facilities, where our products are applied using our custom designed application equipment.
